Hyatt flew in guest chef Ajith Kumar of Hyatt Regency Gurgaon, New Delhi to take over the kitchen of The Cafe at Hyatt City of Dreams to whip up amazing dishes with flavors that seemingly transport you to Gurgaon, India.

I doused my Chicken Biryani with Dal Makhani and it was just superb! Think of it as our Monggo Guisado but with lentils, creamy tomato sauce and seasoned with light Indian spices. Simple yet comforting.
Prawn Curry with Mango
This prawn dish will make you want to go for seconds! The curry, mango, spices and herbs are mixed perfectly together.
Baked Trevally with Mustard Yoghurt
For the non-carnivores, I am sure you will love this! Not only is the fish tender and juicy, the meat easily flakes apart when you run your fork through it.

An classic Indian dessert that is often served during festivities. Sweet and milky grated carrots.
