HEAT – EDSA Shangri-La Manila in partnership with the Embassy of Switzerland in Manila, proudly presents Swiss Week in the Philippines.
To kick off “Swiss Week”, a luncheon was hosted several days ago to experience and showcase Swiss cooking by two of Manila’s esteemed Swiss chefs:
Thomas Wenger, former executive chef of Mandarin Oriental Manila and Makati Shangri-La and Martin Kaspar, chef and owner of L’Entrecôte restaurant.
Enjoy Swiss Week in the Philippines
Mouthwatering recipes were served during this Swiss Week launch, including an incredibly delicious Raclette experience!
A selection of imported Swiss cold cuts and cheeses: Air dried beef, speck, landjaeger, cured ham, buure schueblig, tilsit, appenzeller and tete de moine cheese.
I enjoyed the air dried beef and landjaeger the most which had some emmental cheese since it complimented my Chardonnay wonderfully.
Berner Erbsensuppe (Bernese Green Pea Soup with Salted Pork Knuckle), Bundner Gerstensuppe (Barley Soup from Grisons) and Basler Mehlsuppe (Roasted Flour Soup “Basle Style”)
Raclette cheese with potatoes and pickled vegetables.
This special Raclette cheese is melted, scraped and poured over the baby potatoes.
I had 2 servings of this deliciously salty delight. The cheese is best eaten while it is still hot! A Swiss Week highlight, in my opinion.
See the video below:
Cooked “hunter style”, the venison has been marinated for a week making it fork tender. This Swiss Week dish is served with bacon, onions and mushroom that made this stew even more tasty. It also had braised red cabbage on the side. To finish off the savory flavor, a sliced sweet poached apple and spaetzli were paired with it. The uniqueness and diversity of the Swiss culture can be experienced right on my plate!
Made from fresh cow’s milk, chestnut puree and covered with chestnut whipped cream, this Swiss Week dessert is a delicious indulgence after enjoying all the savory dishes.
