The featured Malaysian dishes and other recipes from our neighboring Southeast Asian countries are prepared and executed by EDSA Shangri-La’s resident Executive Chinese Chef Christopher Chai who hails from Ipoh, Malaysia. To give you an idea of what to expect in this Magical Malaysia food festival, allow me to show you a teaser.

Our sit-down lunch during the Magical Malaysia media launch included several starters, soup, main dishes and a sampler of desserts.

Papaya Salad
Magical Malaysia - HEAT - EDSA Shangri-LaA common salad to most Filipinos. It has a nice combination of just the right amount of acidity and sweetness to excite the palate. Crunchy, colorful and healthy.

Magical Malaysia - HEAT - EDSA Shangri-LaCommon ingredients with an unusual dressing. The peanut sauce was smooth and creamy but not overly sweet, making it go well with the blanched vegetables.

Vegetable Spring Roll
Magical Malaysia - HEAT - EDSA Shangri-LaWrapped and fried julienned vegetables is just so comforting to eat. The dipping sauce made of vinegar and chili had the right balance of sourness, sweetness and heat.

Hot and Sour Soup
Magical Malaysia - HEAT - EDSA Shangri-LaHot and sour – a perfect combination! I was blown away with how the flavors blended together. It’s one punch-packing and very filling soup!

Lapu-Lapu Miso
Magical Malaysia - HEAT - EDSA Shangri-LaThis beautiful dish is oh so addicting! It had the right thickness, the right level of sourness, fresh greens and milky Lapu-Lapu all in one bowl. Wow!

Beef Rendang
Magical Malaysia - HEAT - EDSA Shangri-LaWhen you are in Malaysia make sure to order this! It is one of Malaysia’s most popular food and during my last visit there, I most definitely did not pass on the opportunity to eat Beef Rendang again. It’s always great to eat a dish in a place where it originated from. In this case, the Beef Rendang was made by a Malaysian chef which adds all the more to its authenticity. The very flavorful beef has been cooked for hours making it fork tender. I don’t know how one can say no to this?

Crab Fat Rice
Magical Malaysia - HEAT - EDSA Shangri-LaTo be honest, this version kind of lacked in crab fat. But you know what, it actually pairs well with the other selections of food. The subtle taste of the crab fat doesn’t overpower the main dishes.

Hokkien Mee
Magical Malaysia - HEAT - EDSA Shangri-LaI kind of thought that this particular noodle dish was quite odd considering that it had peanut sauce but the chef pulled it off wonderfully! The flavor of the peanut sauce together with the other ingredients actually grow on you as you eat.

Nam Wan, Leche Flan, Pulut Hitam
Magical Malaysia - HEAT - EDSA Shangri-LaNam Wan or Taro Sago had just the right amount of sweetness and consistency. The Leche Flan was light and addicting while the Pulut Hitam or Black Glutinous Rice Pudding is similar to our local Champorado. These 3 delightful desserts aren’t just aesthetically appealing and delicious. It also represents some of the region’s amazing Southeast Asian dishes.

All proceeds of the cookbook’s sale will be used to aide projects meant for the calamity-ravaged areas in the Visayas region.
