Kittin is the lady behind the famous and very delectable Scarlet Cake of Cookbook Kitchen. She uses only freshly grated Parmesan and Edam cheeses for her ensaimada. Her own version is smothered with buttercream on top while the entire ensaimada dough is mixed with quickmelt cheese.
Whenever I bite into the ensaimada, I can delightfully feel the grainy texture of the sugar. Not too sweet and not too rich. Best paired with a cup of steaming hot chocolate. It’s like your “old school” ensaimada, only with a pleasant twist. It still retains the spirit of our traditional ensaymada which invokes a good amount of nostalgia. This is most definitely the perfect snack while waiting for Noche Buena or upon waking up on Christmas morn.
