F1 Hotel Manila’s 4th Filipino Food Festival: LUZVIMINDA 4: Heirloom Recipes which started June 10 until June 25, 2016, features all-female chefs which will take over F All Day Dining Restaurant’s kitchen.
Luzviminda 4: Heirloom Recipes – A festival of flavors!
Prepare to fill your tummies and satisfy your palates with a variety of distinct Filipino flavors as their guest chefs recreate some of their best treasured dishes as well as heirloom recipes from Luzon, Visayas, and Mindanao.
Luzon is represented by Nancy Reyes-Lumen. A celebrity cook, TV host and a self-proclaimed “Adobo Queen”, she is considered one of the pillars of Filipino cuisine. She has prepared dishes that denote a well-worn level of familiarity with its flavor profile — something that hits the spot every single time.
Chef Pauline Gorriceta Banusing also known as Iloilo’s “palangga” of Gruppo Al Dente Catering Service represents Visayas. This charming Iloilo lass sure knows how to work her way around in the kitchen. And to my surprise, she also happens to be a good friend of my uncle. Small world!
Chef Pauline prepared some of Ilonggo’s favorites and some of mine, too. Being married to an Ilonggo (from Bacolod specifically) and having relatives in Iloilo made me love their food.
Chef Maria Kristina Collantes or “Teng” of Park Inn by Radisson Davao from Mindanao on the other hand is not new to me as we used to attend the same Catholic community years ago and have common friends. But this was the first time I’ve seen her donning her chef jacket. This petite beauty is small but terrible in the kitchen! The dishes she prepared showcased what Mindanao is known for – seafood (tuna in particular).
