I had the opportunity to dine at the newly opened The Tasting Room during the launch of Louis XIII’s Quest For A Legend campaign.
The Tasting Room located at the 6-star Crown Towers Manila at City Of Dreams Manila is a fine dining French restaurant.
This posh restaurant is for anyone who appreciates haute cuisine, where each element is carefully executed to give you that gastronomic delight.
Chef De Cuisine William Mahi is behind the amazing truffle and foie gras laden dishes.
He worked at a two-Michelin starred restaurant named, Spondi in Athens, at the Plaza Athenee of Alain Ducasse and in the kitchen of Joel Robuchon. Prior to his arrival in Manila, he was the Chef De Cuisine at Papillon at Lan Club at the Bund.
Now that you know the person behind the dishes at The Tasting Room, it is time to discover his incredible creations, starting with the restaurant’s Amuse-Bouche (translated to “Mouth Amuser” in English).
Exquisite dishes at The Tasting Room
A trio of Goat Cheese, Chocolate Foie Gras and Limoncello Jelly.
Cubed Goat cheese with sheets of caramelized syrup and pork. According to the server that I interviewed, there is a good amount of pork in this dish but has been converted into powder form and mixed into the caramelized syrup. However way this creation was made, it was absolutely heavenly! A perfect combination of saltiness and sweetness with a nice crunch. A stroke of genius!
Foie Gras coated in milk chocolate in the form of a lollipop. Bite it in half and just let the chocolate and smooth duck liver melt in your mouth.
Limoncello jelly was included as a palate cleanser to wash off all the strong flavors. Similar to “popping bubba” but bigger and more enjoyable to eat.
Then came the Duck Liver Terrine.
Another Foie Gras dish! This time the smooth duck liver is wrapped in a wine jelly. See the colorful accents on your plate? That’s port wine sauce, apple strawberry sauce, pear honey, spicy red wine jelly, cinnamon and honey crisp. Spoon a little bit of each element to get a variety of flavors. Beautiful!
The egg that was poached in olive oil for an hour giving it a deliciously creamy yolk was insanely good! It had a delightful sweetness from the caramelized onions, nutty yet delicate flavors from the Iberico ham, generous layers of winter truffle from Perigord and sprinkled with cepes powder for that earthy flavor… This dish sent me straight to the moon!
It was served in a double wall glass bowl to preserve the heat. It even showcases the beautiful colors and presentation of the dish. A must try when you visit The Tasting Room.
36 Hours Marinated Salmon
Salmon is marinated for 36 hours which was accented with salmon and herring roe releasing a pleasantly briny flavor. The salmon was juicy and flavorful. Every component wowed me!
French Lamb Saddle
Dark, tender, smoky and well seasoned lamb with no hint of gaminess. The lemon confit gives it a bright clean finish while the pine seeds offer a nice textural contrast. Another great dish from The Tasting Room!
We ended our wonderful dinner with this heavenly and sinfully Guanaja Chocolate!
It’s visually an incredible work of art! Chef Mahi puts food on a plate with so much finesse!
Take a sip of the warm comforting chocolate that comes with it.
An exquisite pairing and a gastronomic dinner with a glass of Louis XIII de Remy Martin was really quite an experience.
Every dish served was meticulously prepared and presented. Chef De Cuisine William Mahi did an outstanding job with every single one of them.
Be reminded though that as much as it was an extraordinary experience, make sure to come to The Tasting Room prepared with cash or a credit card.
